The class that began last year about Nutrition and Healthy Eating begins Wednesday, March 13 at 2 pm in the studio. A new topic will be covered every month on the second Wednesday at 2 pm. This is an 9 class series, and the last for this year will be in November. The presenter, Darcy Rhodes, is a Registered Dietician, and has a wealth of knowledge to share! Please see her CV below. Head Cook/Site Manager UAACOG, Westcliffe, CO Aug 2021-current
• Prepare food using standardized recipes for ~35 seniors daily at Custer County
congregant/MOW site. Order, shop, and menu plan for site.
• Complete daily, monthly, and periodic reports to ensure accurate inventory and site
compliance with federal regulations.
• Oversee team of up to 10 volunteers, recruit and train new ones as needed.
Freelance Nutrition Writer, Westcliffe, CO Nov 2020-current
• Write articles for Emedi Health, major health website, on variety of prevention topics.
• Designed and carried out a social media wellness challenge in 2021.
• Write articles for professional Facebook page on a variety of topics, mostly prevention
oriented.
PRN Diet Tech Sunshine Health Facilities, Spokane Valley, WA Aug 2019-June 2021
• Screened and assessed residents of 84 bed LTC/Rehab facility for nutrition risk. Helped
with quarterly review and nutrition at risk conferences.
• Referred at risk residents to appropriate department for follow up.
• Audited weights, care plans, and dining tickets to ensure accuracy.
